Chocolate Honey Ice Cream with Coconut Milk

  • 2 14oz cans coconut milk (not low fat)
  • 1/2 cup cocoa powder
  • 1/3 cup honey
  • 1 TBSP vanilla extract
  • 1 pinch of salt



Blend all ingredients together with an immersion blender or a whisk.

Taste it to make sure that it's as sweet as you'd like it to be, and that the cocoa is as strong as you'd like it to be. Remember that when it's frozen, it won't taste as strong as is does at room temperature.

Make in your ice cream maker according to its instructions.

Transfer to a container and put it in the freezer to finish firming up for a couple of hours.



If you have an ice cream maker, this is just about the easiest thing to make in it. It's also very easy to change the flavors, like leaving out the cocoa and adding in a handful of strawberries.
