- 1 cup sugar
- 1 cup flour
- 2 tbsp. water
- 1 tsp. baking powder
- 2 tbsp. instant coffee
- Coffee or Mocha Icing:
- 1/4 to 1/2 cup of butter or margarine
- 1 2/3 cups of icing sugar
- 2 tbsp. cocoa
- 1/8 tsp. salt
- 3 tbsp. strong hot coffee
- 1 tsp. vanilla or rum extract
Read instructions thoroughly, first!
Note: Do not grease or spray pans.
Beat egg yolks with 1/2 of sugar until lemon coloured and thick.
Add boiling water mixed with instant coffee and beat again.
In a separate bowl, beat egg whites and remaining sugar.
Beat both mixtures together and add dry ingredients.
Bake at 350 degrees F. in 2 (8 inch) ungreased cake pans for 15 to 20 minutes.
Cool for 10 minutes before removing from pans.
Ice with icing.
Coffee or Mocha Icing:
Add sugar and cocoa slowly; adding more icing sugar if needed.
Add salt and coffee.
Add extract; beat well.
Let stand until cooled.
A lovely icing covered coffee cake which is nice and light. Even for those who don't like coffee (like me) might love this family favorite!
