Grain-free Apple Pancakes

Ingredients

  • 1 apple
  • 1 egg
  • cinnamon
  • butter for cooking

 

Instructions

Grate the apple. Squeeze out as much of the juice as you can into a cup, and set it aside to drink while you're waiting for the pancakes to cook.

Put the grated apple into a mixing bowl.

Add the egg & as much cinnamon as you like.

With a fork, beat it all together. It will look like you are making scrambled eggs with apples in it. (Secret: you kind of are.)

On medium-low heat, melt some butter in a nonstick skillet. Drop by spoonfuls and shape into small pancakes - aim for the width of your spatula to decrease the likelihood of them falling apart when you turn them.

Cook on both sides until cooked, but not browned. You're only concerned about the egg being cooked thoroughly & you know what that looks like.

Eat however you like to eat pancakes - syrup, butter, etc. I like them plain with some yogurt on the side.

 

Notes

Pancake shape, french toast flavor! Gluten-free because that's how my body has forced me to roll. Easy to scale up.
