Le Epic Butterscotch Pudding

  • 1.25 cups - Self raising flour
  • 0.75 cups - Castor sugar
  • 50g - Melted butter
  • 20g - Non-melted butter
  • 0.5 cups - Milk
  • 0.5 cups - Sultanas
  • 2 tablespoons - Golden syrup
  • 1.5 cups - Boiling water
  • A boatload - Ice cream



Pre-heat oven to 180C/356F. Grease a 2inch deep oven dish.

Sift flour into a bowl. Add the sugar, melted butter, milk & sultanas. Stir until well combined. Spoon batter into the prepared dish & smooth the surface.

Place the golden syrup, extra butter & boiling water into a heatproof jug.

Pour the golden syrup mixture over the batter.

Bake for 50-55 minutes until golden & cooked.

Leave it to stand for 5 minutes.

Serve with "A boatload" of vanilla ice cream.
