Shortbread cookies

Serving: depending on size somewhere between 15 and 25 cookies Cooktime: 20-30 minutes  

 

Ingredients

  • 2 sticks of softened butter (1cup)
  • 1/2 cup of sugar (optional: brown sugar, in which case make sure it's packed)
  • 2 cups of flour
  • (Optional) 1 tsp Cardamom

 

Instructions

Set oven to 310F

Cream butter, sugar, and cardamom (if using) with a beater

Dump flour in bowl, and mix thoroughly, i use a fork to start and then use beater again

Knead the dough until it has a consistent and smooth texture (i find ~4-5 minutes)

Grease an oven tray

Form the cookies -- either roll flat to about 1cm (1/2") and cut into rectangles and place on the tray, or roll into balls and flatten to around 1cm thickness with a fork straight onto the tray

Place tray of cookies into the over for 20-30 minutes (until just starting to brown)

Remove from the oven and let cool slightly on the tray before moving to an airtight container
