- 125g butter, softened
- 1/2 mug sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 2/3 mugs self raising flour
- 1/2 teaspoon nutmeg
- 2 tbsp sugar
- 1 tbsp cinnamon
Preheat the oven to 160°C/320°F/Gas Mark 4. Grease a flat baking tray.
Mix the butter and the 1/2 mug of sugar together and beat with a wooden spoon. Add the beaten egg and vanilla extract and beat well.
Mix in the flour and the nutmeg until the mixture is smooth.
Place the 2 tablespoons of sugar and the cinnamon on a plate and mix together.
Turn the cookie mixture out onto a surface and squash together. Make into a long sausage, handling as little as possible. Cut into 24. Take each piece and roll into a small ball, roll it in the sugar/cinnamon mix, squash slightly and place on the baking tray.
Bake for 12 minutes. The snickerdoodles should be slightly browned.
A delicious, incredibly easy and VERY quick snack dessert, great for parties
